Stadium Foodservice, From Hot Dogs to Haute Cuisine

Charlie Millerwise Heath Barbato

Education Speakers - Charlie Millerwise and Heath Barbato
Ballparks and Stadiums have long been known for warm beer and soggy hot dogs. While the perception still lingers the reality is that the nation’s stadiums have evolved into world class culinary operations. This session will illustrate how the trend has changed and provide insight into how the Team at Lambeau Field handles 80,000 guests in their proverbial dining room during the Packers Football Season.

Presenter Bios  -

A leader within Delaware North known for delivering high end customer service and outstanding client relationships, Charlie Millerwise offers a unique blend of operational understanding and executive acumen to his role of Delaware North Sportservice General Manager at Lambeau Field.

Since joining Delaware North in 2006 Charlie has served in numerous roles throughout the country. Just prior to his current role, he was Operations Manager at Comerica Park in Detroit, where he developed a streamlined operation that was profitable, guest service oriented and renowned for its top quality food, beverage and retail offerings. He managed this $50 million operation through multiple financially challenging years as well as a legitimate playoff run in 2011.

Through the years Charlie has been instrumental in multiple special events which include the 2009 All Star Game in St. Louis where he along  with an all-star team of Chefs executed the All Star Gala, feeding 8,000 guests in 24 hours. His travel extended him lobally to the 2008 Edmonton Grad Prix as the Project Manager for his first time event in Alberta, Canada. Over the course of six weeks a local airport was transformed into an Indy Car track and Charlie oversaw the construction, logistics and overall operations for the three day set of races bringing in just over $3 million in food, beverage and retail revenue.

Chef Heath Barbato has loved cooking since the first day on the job at his father’s 70-seat bistro in Pittsburgh, where he grew up. He worked there all through high school and culinary school learning valuable lessons in the scratch kitchen where the menu was decided daily based on what was available at the Strip District docks.

Chef Barbato joined Delaware North Sportservice in 2010 at Comerica Park, home of the Detroit Tigers, where he was a Suites Sous Chef for two seasons. When Delaware North Sportservice won the contract for Lambeau Field, Heath was immediately interested and he pestered his boss about is so much that he finally gave in and made him Executive Sous Chef there. He was soon promoted to Executive Chef, the role he currently holds.

As Executive Chef his responsibilities include oversight of the culinary operations for all foodservice areas of the stadium including 1919 Kitchen & Tap ensuring food quality and production.

During his six-year tenure with the company, Chef Barbato has been integral to the successful executive of many events including the 2014 MLB All-Star Game in Minnesota; 2014 NFC Championship Game in Seattle and the 2015 World Congress of Sports Gala in Los Angeles.

Chef Barbato graduated from the Pennsylvania Institute of Culinary Arts with an associate’s degree in Culinary Arts.
